The Kasai Series chef knife's 56mm wide blade is precision forged with a 45 layered Damascus high-carbon stainless steel, with an ultra-premium Japanese AUS-10 steel cutting core. Precise cryogenic tempering with liquid nitrogen increases the steel's crystalline structure, enhancing strength, flexibility, and hardness. The increased blade width allows for improved knuckle clearance.
Hand-polishing reveals a magnificent visual pattern, Bokashi Steel's ‘Fire pattern’. The super-steel core possesses extra high carbon levels, allowing for scalpel-like sharpness with exceptionally long-lasting edge retention. Each knife is hand-finished in the Honbazuke 3-step method, creating a beautiful mirror polished edge at a staggeringly acute 10 degrees per side.
The Kasai Series handle is meticulously constructed of Pakkawood, an incredibly strong and durable wood. It is highly impervious to both heat and moisture with life-long durability. I have a couple professional chef knives, but this one is now my one go-to knife for virtually everything. It slices through an onion practically under its own weight, and I slice onions and veggies paper thin. Also great for fine cutting raw meats during prep work. Razor sharp, with a great balance, it feels like an extension of my own arm!

Took a while to get but worth the wait
Although I am not a chef I can say I do appreciate quality cutlery. This 8.6" chef knife is superb for my kitchen needs. I am extremely happy with the edge, appearance and the way it feels when being used.
I may not be elated with the time it took to arrive at my door, but I can say now that it is in my house I'm thankful it was all I expected!

Great knife! Super sharp. A little heavier than I expected. I own Shun knives that are much lighter. Bokashi is well worth the price. I do wish delivery was faster about 2 months.

This knife is as beautiful as it is razor sharp. The Damascus pattern (I believe it might be waterfall) is absolutely gorgeous, and cutting anything is completely effortless. It was totally worth the wait to receive this beautiful knife.
So far it feels great in my hand but I haven’t used it yet on a heavy prep day that requires me to use the knife for 8+ hours straight yet to see if it will stay comfortable in my hand for type of usage.
