Ingredients

1 Tbsp Lemon Juice

1 Tbsp Water

3 Egg Yolk

1/2 Cup Salted Butter

1/2 Sprig Rosemary

1/2 Sprig Taragon

1/8 Tsp Pepper

Let’s Begin!

  1. Heat your Water bath to 150f. Bring the water to temp.

  2. In a 500ml jar, add all the ingredients. Using a fork, give them all a quick mix. A good mix, bring it all together.

  3. Drop into the water bath GENTLE and let it hang out for 1 hour and 15 min.

  4. Once done, using tongs, pull the jar, or whatever you used. Set it off to the side and let cool to the touch… it should really still be hot / warm still…

  5. Using a hand blender, blitz it up. The sauce should come together well… Like a well put together sauce. Creamy, smooth. You get what I am saying.

  6. Use it NOW!

  7. If you want to use it later, it can be put in a fridge. You will have to bring it back together as it will be cold. You can use a bit of water and blitz it again. Trust me, it works….
