Cory Walby- PORK ROAST WITH APPLE GRAVY

Ingredients

Brine

1 Apple - sliced thin

1/4 cup Brown Sugar

1 Whole Star Anise

1 cup Apple Cider

2 tbsp White Wine Vinegar

4 tbsp Sea Salt (coarse salt… Vancouver Island Salt Company)

3 cups of Water - 1 Cup Boiling, 2 Cups Ice Cold

8 Black Peppercorns

3-4 Sprigs of Fresh Thyme

1/2 Cinnamon Stick

2 Cloves of Garlic - Smashed

For the Pork Roasting

2 Onions - Sliced

2 Apples - Quartered

1/2 Cinnamon Stick

2 Cloves

1/4 cup White WIne

1/4 cup Apple CIder

For the Apple Gravy

5-6 Apples (whatever kind you like) - Pealed and seeded

1/2 a Lemon

1/2 cup Apple Cider

1/2 Star Anise

1/2 Cinnamon Stick

1 tsp Salt

1/2 cup to 1 cup of Pork Roast Drippings

 

Let’s Begin!!

1. For the brine, bring 1 cup of water to a boil. Add all ingredients to a bowl big enough to hold the Roast, and take the 1 cup boiling water and mix all of it together. Once Dissolved, add the 2 cups Ice Water to the bowl and set into the Fridge for 24 hours.

2. Pull Roast from the Brine. Wash and dry it well. Discard all Brine.

3. Preheat oven to 375f. Mix together all Roasting Materials and place in to Roasting Tin. Take pork roast and place into tin, Fat side up. here you can score the fat if you want it to look pretty.

4. Roast for 1 hour, uncovered. Keep an eye on the Roast to make sure you don’t color it too much. . If you do, get some aluminum foil and cover the roast lightly. Continue to roast for 1 more hour or till Internal Temp reaches 155-160f

5. Pull from the Tin, Slice and serve with Apple Gravy. Enjoy!!

How to make the Apple Gravy

1. Take all the Apples, Lemons, Seasoning and Apple Cider and place into a pot over a Medium Heat.

2. Bring to a Boil and let go for 10 min till the apples are soft and ready to blend up! If the liquid gets low, add a bit more Cider.

3. Once apples are ready to blend, add the Pork Roast Drippings and mix through. Using a hand blender, or stand up blender, Mix and Blitz till a fine puree. Taste for Seasoning. Enjoy!!
